Meat and loads of veggies meatloaf!

There is nothing worse than trying to cook dinner and have to scour the internet in search for recipes that are suitable for the whole family and your little monsters will eat! 😬 Worse still having to cook two different meals! 🙀

Who has time for all this cooking? 🤷‍♀️

I used to be in this situation, so I know how frustrating it can be and not to mention time consuming, and after all the cooking they don’t even eat any of the meals! 🤦🏼‍♀️😡😩

But don’t despair, I’m here to tell you that it’s possible to cook only one meal that the whole family will enjoy, it is packed full of nutritious ingredients and can be taken to school or work for a lovely nourishing snack! 😋

This recipe is so easy and quick that you will not know what to do with all the spare time! 🤩

The recipe is called Meat and veggies meatloaf, and before you switch off or scroll past, hear me out!

I know meatloaf is not everyone cup of tea, my husband didn’t really enjoy it very much, he used to complain that it was too fatty and heavy. 🙄 but when i made this special muffin tin meatloaf he LOVED it! 🙏

Because they are cooked in small individual portions and are packed with yummy vegetables they retain moisture and are lovely and healthy.

The best thing is you can add as little or as much vegetables you want and whatever veggies you have in the fridge.

The topping really takes this humble meatloaf to the next level!


Makes: 12 muffins

Prep and Cook time: 35 min


500g of ground beef

Carrot, cauliflower, courgette (all finely grated or pop it in the food processor)

1 egg

bread crumbs from 1 piece of bread

1 Tbs parsley

3 Tbs Worcestershire sauce

Salt and pepper to taste



Grated cheese


Mix all the ingredients together.

Taste, and adjust seasoning to your liking. (If you don’t like trying raw meat do a quick test fry with a small amount of the mixture.)

Divide meat mixture out into a muffin tin.

Top with ketchup and sprinkle some cheese on top.

Bake at 180C for 25 mins


⭐️You can freeze it before or after baking.

✅If freezing before cooking, defrost throughout and follow the cooking instructions as above.

✅ if freezing after cooking, you can heat it up in the microwave or bake In the oven for 10 minutes.

⭐️You can use other toppings of your choice:

♥️ Barbecue sauce

♥️ Sweet chilli

⭐️ Add more veggies:

🌽 Sweetcorn

🥦 broccoli

🍠 sweet potatoes
