ROLL UP, ROLL UP who wants a healthy roll?

I love pizza and rolls so why not combine both loves into one recipe that is actually healthy and satisfying?

I came across this recipe just recently so it’s still untested, but it sounds so good that I had to share with you. I have added it to my recipe planner for next week and will try it at the weekend!

I must admit thought, I’m not good at pastries so this recipe will definitely be a family affair with hubby doing the dough.

These rolls can be kept in the freezer after cooked and cooled for up to 1 month. When you are ready to serve just heat it from frozen at 218C for 15mins. So without further ado, here is our next recipe taken from the Woman’s Day website.

Broccoli and Cheddar Rollups

Makes 4

Prep & Cook time: 50 min

170g broccoli crowns, thinly sliced (about 2 1/4 cups)

1/2 medium onion, thinly sliced

1/4 c. fresh flat-leaf parsley

2 tbsp. olive oil

Salt & Pepper

170g extra-sharp Cheddar, coarsely grated

Flour, for the work surface

454g pizza dough, thawed if frozen

2 tbsp. Dijon mustard or Tomato sauce

Heat oven to 218 degrees C. Line a large rimmed baking sheet with parchment paper. In a large bowl, combine the broccoli, onion, parsley, 1 tablespoon oil, and 1/4 teaspoon each salt and pepper. Fold in the cheese. On a lightly floured work surface, shape the pizza dough into a 14-inch circle, spread with the mustard or tomato sauce and cut into 8 triangles. Divide the broccoli mixture among the triangles (about 1/3 cup per triangle). Starting at the wide end, roll dough around the filling. Transfer rollups to the prepared baking sheet, brush with the remaining tablespoon oil and bake until golden brown, 20 to 22 minutes. Serve with a salad, if desired.
