Now that children are back to school we face a new challenge: What to pack into their lunch bags for school? As a mother I can relate and understand how difficult it is to have to constantly think of ideas for what to cook and even harder to find inspiration for kids lunch bags. Finding a recipes that doesn't take too long to make but will still appeal to kids, tastes good and are healthy feel impossible to find.
Well fear not, here is a recipe that is sure to be a hit with the kids and parents alike, quick to make and best of all cheap!
Let’s kick off with my all time favourite recipe (this is my daughter’s favourite too)! 🤤This dish is great when hot but just as delicious cold. I normally make it for dinner and send the leftovers to school next day.
Tuna and green bean pasta Prep and cook time: 30 minutes
Ingredients 350g pasta shells 200g pack trimmed fine beans, cut in half 200g can tuna in oil grated zest of a lemon olive oil for drizzling
Cook the pasta and green beans in boiling salted water until pasta is al dente and green beans are tender. Meanwhile, tip the tuna and its oil into a bowl and flake the fish, stir in the lemon zest and season to taste. Drain the pasta and beans, return them to the pan and toss with the tuna mixture. Add a little olive oil if you need to moisten everything.
Serve the tuna and green bean pasta on its own or with a tomato and lettuce salad.
